The blessed convergence of fabulous food and fabulous views puts George’s consistently at the top. The menu changes with the seasons — particularly since the advent of chef Trey Foshee in May 1999, who makes good use of his direct line to the unsurpassed organic produce at local Chino Farm in Rancho Santa Fe. Entrees seem deceptively traditional (a pan-roasted chicken breast, a New York strip), but are enlivened with creativity (asparagus and chanterelles or Maytag bleu cheese-whipped potatoes). Spring’s menus burst with tender, young vegetables, and a summer menu is likely to feature Maine lobster paired with ambrosial sweet corn. The seared ahi is always a dependable show-stopper. Chef Trey Foshee was named one of America’s 10 best new chefs by Food & Wine magazine in 1998.
